WELCOME TO THE CHAOS

We are here for a study and conversation of the Texas service industry and everything in between. This is honestly an exploration with no intended destination. An experiment that most likely will go horribly wrong leaving no discernible positive or negative change to the industry that is hospitality. Most likely an ill fated zeppelin with a whimper as it implodes. We are going for that perfect beef Wellington, but might have to stomach some 3am drive-thru on the way. Even still, after the better part of twenty-six years working at all different levels from dishwasher to market partner I would be remised to not share a few stories as I make my exit. I am looking forward to digging back into the good, bad, and ugly with the help of guest along the way. Maybe this will draw the curtain back on an industry giving insight and perhaps making a change. Maybe it will be a round table of glories and embarrassments. What it will be is interesting. At least for a few episodes. Pour up something tasty and lets roll the dice. Art hides in the strangest places.
